Brouwerij Boon pays homage to the origins of lambic with Oude Geuze Rémy Le Mercier, a limited-edition creation inspired by a historic 1559 ordinance considered among the first records of the lambic recipe. The ordinance prescribed precise proportions of cereals, particularly barley, wheat, and oats, in local beer production. Boon reinterpreted it by selecting a recipe with 10% oats, to demonstrate that this ingredient, though ancient, can remain relevant: it lends softness and fullness to the body, strengthens the head, and adds a delicate nutty character.
